Crash Hot Potatoes

Crash Hot Potatoes
Baked Potato Bar, move over.

We’ve discovered something we like even better.

What could be better than Russets covered broccoli, bacon and cheese?

Crash Hot Potatoes.

This Australian dish has become a huge favorite in our house.

Seriously, my oldest daughter would be happy to have nothing but these, Mac and Cheese, and Japanese Stir-Fry for dinners for the rest of her life.

I love her simple wants and tastes.

What I like about this dish is its versatility. Like a Baked Potato Bar, you can put whatever toppings you want on each potato. It can be a side or you can even make it into a main dish by sprinkling crumbled bacon on each potato.

But enough chit-chat. It’s time to go down under.

Crash Hot Potatoes

Ingredients:

  • Red or golden potatoes (as many as desired)
  • Olive oil or melted butter

Toppings:

  • Seasonings of choice. Possibilities include salt, pepper, garlic powder, paprika, chives, onion powder, chili powder or whatever suits your fancy.
  • Shredded cheese of choice (if desired)
  • Cooked bacon, crumbled (if desired)



Directions:

Scrub potatoes. Boil until tender (approx. 15-20 min.) and drain.

Preheat oven to 400 degrees. Grease a cookie sheet with olive oil or cooking spray. Place potatoes on cookie sheet leaving about an inch or so of space between each potato. Using a potato masher, gently push down on the potatoes until they resemble a thick cookie. You may need to twist the masher a bit.

Drizzle potatoes with olive oil or melted butter. Top with desired toppings. Bake in oven for about 20 minutes.

If desired, you can put the crumbled bacon on after the potatoes come out of the oven. That’s what we do.

    Super-duper recipe! I would use veggie bacon but everything else sounds delicious.

      It is tasty. We use turkey bacon, but veggie bacon sounds good too. I might try that sometime.
