Mint Sun Tea

When the weather is hot, I like to enjoy a refreshing glass of sun tea.

It’s nice to take advantage of God’s natural brewing station outside and put a jar of water and tea bags on my front step for a few hours. I find that brewing this way makes a much smoother tea than brewing with boiling water.

I’ve also discovered that adding mint tea bags to the brew makes the sun tea even more smooth and refreshing. That’s how I developed this recipe for Mint Sun Tea. I use a combination of black and mint teas to create a cool and soothing iced tea.

Now I would be happy with just the black and mint tea, but my children like the Southern-style sweet tea that has sugar added. We don’t use refined sugars so I’ve included organic sugar in this recipe. Feel free to include or exclude it as you like.

Mint Sun Tea

Ingredients:

• 1 small sun tea jar or other jar (see mine below)
• 6 cups water
• 4 black tea bags (we used Twinings Irish Breakfast Tea)
• 2 peppermint tea bags (we used Twinings Pure Peppermint)
• 3 Tbsp organic sugar (or more if you like it sweeter)
• ice

Directions:

Pour the 6 cups of water into the jar. Submerse all tea bags in the water but leave the tags outside of the jar. Screw on the lid leaving the tags on the outside. Set the jar out in the sun for 3-5 hours.

When the brew is strong enough for your taste, bring in the jar and remove the tea bags. While the liquid is still warm, add the organic sugar and stir well. Serve over ice.

Unused tea should be refrigerated. It typically lasts for 2-3 days.

You can use any kind of clear jar with a lid to make sun tea. I used this sun tea jar, but I’ve also used very large canning jars.

You can also use any brand of teas that you like but I find Twinings to be exceptionally tasty. I fell in love with this brand after a British friend of mine introduced me to it.
